September Skillet Meals~ Bean, Corn and Tortilla Salad


This was the best meal I made so far. I cooked 2 lbs pinto beans, drained and added 2 jars of salsa and a can of corn, keep warm. In a separate bowl I sliced up 6 roma tomatoes and a bunch of scallions, In a 3rd bowl I crunched up 2 bags of tortilla chips ( not too small) and shredded romain lettuce and tossed. Place the chips lettuce in a bowl, add bean mix and top with tomatoes and cheese. Serve immediately.

 Estimated meal cost $13



*Note: I am not a talented cook, nor do I really enjoy it. I tend to prepare the same mundane meals. So I decided for the month of September, I am making a new to me, meal each day. These meals are no cook or stove top meals, they are low cost and healthy. Meals vary and I hope to do some breakfast meals as well. I do not follow recipes well and I usually estimate quantities.   1. Yum! This one sounds delish! I love beans and make a salad with them, that is perfect. Now you got me thinking about a favorite recipes series. Hmmm? Well, I'll see if I can find time for it.
