September Skillet Meals~ Crispy Bacon Coleslaw


This started out to be a cabbage salad with ramen noodles, that I was going to alter. Then one of the children asked me to make cole slaw. So 2 small cabbage heads, 2lbs bacon, 1pkg raisins and a bit of mayo, vinegar and sugar and you have my 2nd ever attempt at cole slaw. It will be a while before I try it again. My family said it tasted far better than it looked and most of them really liked it, however, I feel it was a terrible waste of perfectly good bacon..

*Note: I am not a talented cook, nor do I really enjoy it. I tend to prepare the same mundane meals. So I decided for the month of September, I am making a new to me, meal each day. These meals are no cook or stove top meals, they are low cost and healthy. Meals vary and I hope to do some breakfast meals as well. I do not follow recipes well and I usually estimate quantities.   1. Bacon is best in a BLT and by itself. You tried, that's what matters.
